This is what to cook when you don’t have much time or energy to cook AND you still want to eat healthy. The other night we were so busy between the kid’s Open House at school and our neighborhood Home Owners meeting that I needed something quick and something I could make with what I had without planning. So, here is what I pulled out of my freezer, refrigerator & pantry:
Ingredients:
2 cups brown rice
1 Tbsp. coconut oil
1-2 lbs. frozen shrimp
1-2 heads of fresh broccoli
3 garlic cloves, peeled & minced
1/4 – 1/2 cup of coconut milk
Juice from 1-2 lemons
Fresh cracked pepper & Sea Salt
Directions:
Step 1 – Heat wok on med-low heat, add 1 Tbsp of coconut oil
Step 2 – Rinse & de-tail shrimp; make sure it is thawed out by rinsing in cold water
Step 3 – Boil water for brown rice, cook and set aside
Step 4 – Add shrimp to wok with garlic, sea salt & cracked pepper. Saute for 1 min.
Step 5 – Add chopped broccoli
Step 6 – Add coconut milk. Cook until broccoli is moist & tender.
Step 7 – Serve over brown rice or Quinoa

Tonight I had NO plans for dinner at 5:00. I had some broccoli and some shrimp, and I stumbled upon this recipe. It was ready in no time flat, easy to clean up, and….wait for it….my husband AND my children loved it!
This will be a new staple in our house. Thank you so much for yummy, simple, healthy goodness!
